Organic Mango cake without oven

Mango cake enjoyed by not only kids but also eldersIngredients:
- Dry ingredients
- 1. Organic whole wheat 1 & 1/2 cup
- 2. Baking powder: 1 & 1/2 teaspoon
- 3. Baking soda:1/4 teaspoon
- 4.cardamom powder: 1/2 teaspoon
- 5. Salt: 1/4 teaspoon
- Wet ingredients
- 1. Granulated sugar: 2/3 cup
- 2. Fresh mango pulp: 3/4 cup
- 3. 1/4 cup milk
- 4. 1/3 cup vegetable oil cold pressed
Procedure:
- 1. Preheat the kadai for 5 mins on low flame. Grease a loaf pan with little oil and dust with flour to coat the pan, or you may use parchment paper. {My loaf pan dimensions- 25.5 cms x 13 cms x height of 7 cms}.
- 2. In a mixing bowl, sift all the dry ingredients. Whisk well and set aside.
- 3. In another mixing bowl, add all the wet ingredients, whisk well until everything is well combined and you have a homogeneous mixture.
- 4 .Make a well in the bowl containing the dry ingredients and add the wet ingredients as seen above. Mix just until combined and no more flour pockets are visible. Do not over mix, or you will end up with a pretty flat cake. A few lumps are fine in the batter.
- 5.Transfer the batter to greased loaf pan and garnish with fresh organic nuts like almonds & pista; and bake it in kadai for about 30 to 40 minutes or until a toothpick inserted into the cake comes out clean.
- 6. Cool down the cake pan for about 10 mins and remove the cake into a plate and cut into slices once cooled.
